Cold cucumber soup with liquorice

(Serves 4)

Ingredients
• 2 big cucumbers
• 1 bunch of fresh mint
• 6 dl cold chicken bouillon
• 400 g greek yoghurt 2 %
• Johan Bülow Raw Liquorice Powder
• Salt, pepper
• 4 slices of Johan Bülow Liquorice Bread (or ordinary brownbread)
• Virgin olive oil

Directions
Chop the (liquorice) brownbread into small bits and fry it in oil until they are golden.
Put the brownbread croutons on a paper which soaks up the fat until they are crispy.
Blend cucumber, mint leaves, bouillon and yoghurt and season with salt and pepper.
Serve the soup with brownbread croutons and a sprinkle of Johan Bülow Raw Liquorice Powder.
